Live your life







I took this shot when we went hiking at Canmore. I never thought I would like outdoor activities such as hiking,for me it was boring and tiring maybe Im not the type that is adventurous and I think that its too dangerous. Heard the term "YOLO"? I know its an overrated term but my point is its true you only live once so explore the world and conquer your fears .

Cooking 101 - Dessert


Strawberry Balsamic Vinaigrette.

I love balsamic so much! that I used them for cooking, for my salads. I made this concoction as my dessert, "healthy" but I added 2 scoops of ice cream on the side but you can also add some whip cream to it. I hope you enjoy this simple concoction! 

  • I pint straweberries
  • 2-5 tbsp of balsamic vinaigrette dressing 
  • 4 brown sugar cubes or 2-3 tbsp of brown sugar
  • 1/4 cup of sugar 
  • 2tbsp of blue agave syrup / honey
  • 1- 2tsp black pepper ( depends how much you want )



Soaked strawberries with balsamic vinagrette and mixed all ingredients. Cover with aluminum foil and refrigerate 45 mins

Roasted Yam and cranberry salad

  • 1 1/2 kg yams ( approx 2-3)
  • 2tbsp canola / olive oil
  • salt and black pepper to taste
  • 1/2 cup green pepper diced
  • 1/2 cup red pepper diced
  • 1/4 cup green onion chopped
  • 3/4 cup dried cranberries
  • 1/2 cup yellow onions diced finely
  • 1/2 cup pumpkin seed toasted
dressing:
  • 2 tbsp pure maple syrup
  • 2tbsp white wine vinegar
  • 1 tsp dijon
  • 2 tbsp orange juice
  • 1/2 tsp orange zest
  • 1/2 cup canola /olive oil 
  • salt and black pepper to taste
preheat oven to 175 c ( 350 F)
wash,peel and cut yams into 1 inch cubes. toss with 2 tbsp of oil and season with salt and pepper.
roast for 15-20 mins until tender but not overcooked. cool to room temp
whisk all dressing ingredients together and toss with cooked yams,chopped vegetable,cranberries and seeds. Check flavour and add salt and pepper if needed.

Baking 101- M&M Cookies





M&M Cookies


Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 cup shortening
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups candy-coated milk chocolate pieces



Directions

  1. In a large bowl, mix sugar, eggs, shortening, and vanilla thoroughly. Add flour, salt, and baking soda to creamed mixture. Blend well. Add 3/4 cup of M&M candies.
  2. Drop dough by teaspoonful onto cookie sheet. Slightly push a few candies on top of each dough ball with remaining candies.
  3. Bake at 350 degrees F (175 degrees C) for 9 to 11 minutes, to your liking.
