Cooking 101- Eat something healthy!



Roasted Yam and cranberry salad

  • 1 1/2 kg yams ( approx 2-3)
  • 2tbsp canola / olive oil
  • salt and black pepper to taste
  • 1/2 cup green pepper diced
  • 1/2 cup red pepper diced
  • 1/4 cup green onion chopped
  • 3/4 cup dried cranberries
  • 1/2 cup yellow onions diced finely
  • 1/2 cup pumpkin seed toasted
dressing:
  • 2 tbsp pure maple syrup
  • 2tbsp white wine vinegar
  • 1 tsp dijon
  • 2 tbsp orange juice
  • 1/2 tsp orange zest
  • 1/2 cup canola /olive oil 
  • salt and black pepper to taste
preheat oven to 175 c ( 350 F)
wash,peel and cut yams into 1 inch cubes. toss with 2 tbsp of oil and season with salt and pepper.
roast for 15-20 mins until tender but not overcooked. cool to room temp
whisk all dressing ingredients together and toss with cooked yams,chopped vegetable,cranberries and seeds. Check flavour and add salt and pepper if needed.
